Inside Out French Toast Sandwich

  • 1 cinnamon-raisin English muffin
  • 1 egg
  • 1 tablespoon peanut butter
  • 1 teaspoon brown sugar
  • 1/4 teaspoon ground cinnamon


  1. Toast the English muffin, and scramble the egg in a small skillet. (You can also spray a ramekin with non-stick cooking spray, pour in the egg, cover, then microwave for 30-60 seconds until the egg is cooked through.)
  2. Meanwhile, combine peanut butter, brown sugar and cinnamon. Spread between the warmed muffin slices.
  3. Place the egg on top and enjoy!
