Hot Beef Dip Roll Ups
School starts for us in one week. One week!! Where in the world did this summer go?
As we try to cram in all the things we didn’t get done off our Summer Bucket List into this last week, I can’t help but let the planning side of me start getting ready for the school year. As much as I want to avoid it, reality is school is starting and I need to start planning!
One of the biggest areas where planning is needed for us is school lunch. We actually have a great school lunch program here in Kansas, but there are days when my kids aren’t necessarily fans of what is on the menu and opt to bring lunch from home. Coming with creative ideas that they’ll eat and love can be tough!
We tend to do a lot of wraps for lunch because they are easy to make, portable and usually good hot or cold. This Hot Beef Dip Rollup was a favorite this summer and I imagine it will be requested often during the school year. Even though the title of the recipes says it’s “hot”, this rollup is just as good served chilled. Service with a side of fruit and some carrot sticks and you’ve got yourself a great lunch your kids will love!
Hot Beef Dip Rollups
½ cup chopped vadialla onion
2 tablespoons butter
½ cup light sour cream
½ cup light mayonnaise
4 ounces cream cheese, softened
1 7.5 ounce package Land O’Frost Deli Shaved Beef, chopped
6 Spinach and Herb tortilla wraps
For the filling:
In a large skillet, saute onion in butter over medium heat until the onion is tender.
Mix sour cream, mayonnaise, cream cheese and dried beef into the skillet. Stir continously until all the ingredients are well blended and melted together.
Divide beef dip equally into 6 portions. Spread each portion evenly over a tortilla and roll up tightly. Wrap in plastic wrap and place in the refrigerator for 1 hour.
Remove plastic wrap and slice into 1 inch slices with a serrated knife.
