Not Your Brown Bag’s Hot Grilled Roast Beef Sandwich
Yields: 2 Sandwiches
Ingredients:
- 2 ciabatta sandwich loaves (individual)
- 1 Tbsp horseradish
- 2 Tbsp mayo
- 1 Tbsp sour cream
- 1 medium yellow onion, sliced
- 4 Tbsp butter
- 2 slices aged Swiss
- 1 10 oz package Land O’Frost Roast Beef
- Heat a griddle to about 365 and place your ½ stick (4 Tbsp) butter on the griddle and allow it to melt.
- In one half of the griddle: place your sliced ciabatta loaves inside down.
- On ¼ of the griddle: place your onions and allow them to caramelize.
- While you’re waiting on this, mix the horseradish, mayo and sour cream together.
- When the onions are just about perfectly caramelized, flip the bread over to toast the tops and move the onions over next to the bread.
- Now place your lunchmeat onto the griddle; you want it in separate slices but they can be layered. Use your spatula to toss the lunchmeat around and get it all nice and seared; this brings the MOST amazing flavor to the meat.
- Now, put ½ the onions on the bottom slice of ciabatta; top with meat, more onions and slice of cheese. Slather some of that horseradish mixture on the top ciabatta loaf, close and allow the steam to soften the cheese.
Cut in half and devour.
